snickerdoodles
I take a very "this is not brain surgery" attitude to baking cookies. I'm not meticulous in mixing my ingredients, and I use my hands a lot. They're cookies. They're not going to come out bad because you added the sugar at the same time as the eggs and butter, or because you use a colander to sift all the dry ingredients together at once.
Mix together 1 cup butter (room temp), 1 cup sugar, 1 cup powdered sugar, 1 cup vegetable oil, and 2 eggs.
Sift together and mix in 4 1/4 cups flour, 1 tsp. baking powder, 1 tsp. cream of tartar, and 1/2 tsp. salt.
In a shallow bowl (or deep plate) mix together 1/2 cup sugar and 1 tbs. ground cinnamon. Form dough into 1" balls.
Roll balls in cinnamon-sugar mix.
Place balls on lightly greased baking sheet a few inches apart and bake at 375 degrees for 12-15 minutes.
Makes a buttload of 7 dozen cookies. Recipe is easy to halve if you don't want that many.
